Ah, Walt, you are a godsend! You were writing this just for me, weren't you? The guilty gal who buys frozen pie crusts. I made my own at Thanksgiving, and I had a hard dome on top. It was so embarrassing, but I felt I almost should have gotten a Buckminster Fuller award for my structure.
I will try again with your good advice (and my food processor) and maybe I'll succeed.

Ginny, I didn't know I could have been in the running for the Bucky Awards all those years ago... Maybe that's why I went to architecture school; inspired by pie crust! :)
I am guilty, too. The New Year's quiche I made was in a store bought crust. I admire your persistence ... years to perfect the crust. I would have given up ages ago.
