We had some leftover okra and tomatoes in the freezer and decided that it should make a good pizza topping. So on Friday I made a crust, sauteed some mushrooms and a leftover half an onion from the fridge, and used the okra and tomatoes as a sauce for the two pizzas.
They were delicious! I think this is the first time I've had okra on a pizza. It probably won't be the last.
I neapolinated the picture and it looked even more okralicious !!
ReplyDeleteI hope Ken has a nice time in North Carolina. I bet the time will pass very quickly for you, with all that to do in his absence - that's what I usually find when Nick is away - I have loads of things planned but the job of just running the house and routine stuff takes all my time.
I am getting worried about what Ken will eat when he visits the US, given the standard of his home meals.
ReplyDeleteOK, okra in the pizza sauce is really clever. I would't have thought of that. Sounds like it was a nice new twist.
ReplyDeleteThat just looks delicious... thank gord Pauline is cooking as I type!
ReplyDeleteSo much to do. You'll be worn out by the time he gets back.
