Last week, just before heading to Normandy, Ken and I were invited to our neighbors' house for lunch. Joining us was the woman who sold the house to us, Josette. Since you rarely show up as a guest in someone's home without bringing something, I made zucchini bread for the hostess.
But, since we hadn't seen Josette in nearly a year, I thought I'd make her a special applesauce spice cake (she likes pain d'épices) made with the apples from our tree - formerly her tree. I made two cakes, in fact. The second one was for our Normandy hostess, Mary-Jacques.
We tasted the cake chez Mary-Jacques and it was, if I do say so myself, delicious! I hope that Josette enjoyed it. This cake I made with fresh applesauce that I made the day before. But, I've also frozen a bunch of applesauce that I'll thaw out and use for applesauce cakes all through the fall and winter. They're especially good with a little powdered sugar sprinkled on top.
